Experience a Valentine dinner under the starlit skies at the Poolside on February 14 for only P6,888 net for two. The six-course set menu includes Bouillabaisse Salad with Shrimp, Clams, Crab, Mussel, and Prawn Roe; Crayfish Bisque; Gnocchi with Scallop, Tomato, and Basil with Pecorino; choice of main dish, either the Pan-Roasted Grouper with Smoked Tomato and Butter Bean Salad with Marinated Olive and Basil Dressing, or Steak Diane with Asparagus, Garlic, Sautéed Shitake Mushroom, and Chestnuts with Marsala Wine Sauce; Lemon Yoghurt Sherbet; and Salted Chocolate Mousse with Strawberry Ice Cream and Pistachio. A semi-buffet grill adventure features a choice of ribeye, tenderloin, tiger prawns, black grouper, pork belly, and lamb. Mouthwatering appetizers include Maine lobster, sustainable Selva shrimps, Irish Gallagher oysters, Thai calamari salad, and curacha crab. Flavors of love at Tivoli Royale Country Club

Tivoli Royale Country Club sparks love and romance using local ingredients to highlight the season’s best. From February 12 to 17, 6 to 9 pm, Executive Chef Jonnel Roxas and his team present Lokal na Pag-Ibig, a special four-course dinner for only P3,300 net per couple, in collaboration with social enterprise PHILIA Business Center.

Inspired by sustainable and seasonal ingredients, the menu is infused with organic coffee, cacao, coco, and muscovado sugar responsibly sourced from the rural and upland mountains of Mindanao.

The menu maximizes the lively flavors of high-quality beans and plant-based sugar. For the PHILIA Business Center founders, the result is a dining experience where fun over formality takes center stage. “Our first collaboration in creating these recipes is beyond ordinary, and maximized the products of our very own artisan communities,” says PHILIA founder Roma Padua.

For the appetizer, Kinilaw na Hipon sa Tustadas is light and refreshing, with the sourness delicately balanced with PHILIA Antique Muscovado’s mild sweetness.

The straightforward Sabaw ng Espinika is made with puréed spinach, onions, olive oil, and other natural spices. It’s finished with the Antique Muscovado Sugar to mellow out the sharp and bitter taste of spinach.

The main course showcases two options: the Kinulob na Balikat ng Baka sa Toyo at Cacao for meat lovers, and the Inihaw na Salmon sa Kape at Balsamico for pescatarians.

Local farmers of PHILIA

The slow-braised beef shoulder has a perfect ratio of fat and meat, complemented with sweet carrot purée and crunchy greens. The Sultan Kudarat Premium Quality Tablea makes a comforting combination with soy sauce.

While the salmon is a straightforward dish, the fruity and floral blend of the PHILIA Sultan Kudarat Arabica Coffee breaks in the fat. It is served with a medley of colorful local produce like pumpkin, cucumber, and snow peas.

The dessert, Trio Dulces, starts with a rich, smooth mousse with PHILIA Sultan Kudarat Robusta Coffee, folded with coco sugar sabayon and coffee liquor and topped with PHILIA Premium Cacao Nibs. The leche flan is a balance of sweet and salty, smooth and creamy, with the crème caramel in coco sugar infused into the mix. The crêpe mille-feuille’s heady flavor is from the PHILIA Davao Premium Cacao Tablea, served with vanilla whipped cream, crushed toasted peanuts, and warm chocolate rhum sauce.
